Can the watermark be removed again?
It is drawn into each page's content, not attached as a removable layer, so it will not come off by deleting an annotation. It is not a security measure though — anyone determined enough can edit a PDF. Treat it as a clear label, not as protection.
Why will it not accept some characters?
Text is set in one of the fonts built into the PDF format, and those cover Latin letters, accents and common punctuation but not Chinese, Japanese, Korean, Arabic or Cyrillic. The page names any character it cannot draw as you type, rather than dropping it silently. For those alphabets, make an image of the words and use the logo option.
Does the preview match the file exactly?
The position, angle, size and repetition come from the same code that writes the file, and the text is measured with the PDF font's own metrics rather than the browser's, so the placement matches. The glyphs on screen are drawn by your browser, so they can look very slightly different from the ones in the download.
