Why did I get nothing back?
The PDF is almost certainly a scan, which is an image rather than text. Run it through the OCR tool and try again.
Are tables kept?
Not as tables. A table becomes its text in reading order, which is fine for quoting and wrong for re-typesetting.
Is the document uploaded?
No. Extraction happens on your own device.
